Yummy Hummus

Healthy protein! Do you like lemon and garlic? If you do, this will make you happy!

Ingredients:

Blend smooth in food processor:

1  16 oz. can of Bush Garbanzos (chick peas) drain and rinse well

1  packet of Bush hummus made easy classic

Blend smooth in a clean food processor, then add to hummus mixture

1 scallion cut up all white and green

1/3 cup fresh parsley

zest of 1 lemon

1/2 juice of 1 lemon

1 or 2 cloves of garlic

1 tbs. of extra virgin olive oil

Blend all together top with a dash of paprika. Eat with pita bread or chips. I also like to eat it with tortilla chips! This is very healthy and good for you! Delicious!

Bobbi’s Lasagna

When my sister Bobbi made this lasagna, it took me back in time when my precious mom made it for us.

Bobbi remembered this recipe but put her own twist on it. 🙂 When I took a bite I remembered the lasagna my Mom use to make!!

It was such a delight!!

Ingredients:

I package lasagna noodles (boil 6 min. and rinse with cold water)

2 jars Bartalli sauce ( marinara )

1 lb. lean hamburger (browned)

2 cartons of cottage cheese

2 package of sharp shredded cheddar cheese

1 lg. package of mozzarella cheese

1 cup parmesan cheese

Recipe:

Spray large baking dish, layer with sauce, noodles, meat, cottage cheese, shredded cheese, parmesan cheese, then noodles , sauces ect.

Bake 350 covered 30 min.

Then uncovered for another 30 min.

Eat and enjoy 🙂

Amanda’s Goulosh

Ingredients:

2 lbs. hamburger

1 small onion diced

1 can tomato soup

1 can stewed tomatoes with juice; diced up

1/4 cup brown sugar

garlic powder, onion powder, salt, and pepper ( to taste)

3 to 4 cups of cooked elbow noodles

Recipe:

Brown meat with onions. Add the rest of the ingredients except noodles, then simmer for 10 min.

Pour sauce over noodles or mix all together with sauce.

So Delicious!!

When I made this I used only 2 tbs. brown sugar, 1lb. hamburger, 1 tbs. butter, 1 small can of mushrooms, and 3/4 of a lb. box of mini penne pasta.

Beth’s Cherry Pineapple Cobbler

So easy and yummy!!

Ingredients:

1 stick of salted butter

1 can crushed pineapple and its juice

1 can cherry pie filling

1 1/2 cups self rising flour

1 cup milk

1/2 cup buttermilk

1 cup sugar

Recipe:

Heat oven at 375*

In a 9 by 13 baking dish put in butter and melt in oven.

In a mixing bowl add flour, sugar; then stir.  Add milk and buttermilk. Stir until well combined.

Take baking dish with melted butter out of oven. Add pineapple and its juice, and spoon on cherry pie filling.

Pour batter over it and swirl together with a butter knife.

Bake for 45 to 50 min. until golden brown.

Delicious!!

Sweet and Sour Sauce

This is so much better than buying a bottle at the store!!

Ingredients:

1 cup pineapple juice

1/3 cup water

3 tbs. seasoned rice vinegar

1 tbs. ketchup

1 tbs. low sodium soy sauce

1/2 cup brown sugar

3 tbs. corn starch

Put all ingredients in sauce pan, whisk together well. Bring to a slow boil; whisking until thickened. Simmer for 5 minutes. ENJOY, with egg rolls or any Asian dish.

Italian Antipasti

We had a taste of Tuscany, Italy tonight; in my small town of Troy MO.  Spent a lot of my pay check, but it was worth it!!!  I made a tasty antipasti with bruschetta.

Mix together:

2 tbs. of chopped fresh basil, 1 package, sliced cherry tomatoes 1/2 jar of slices Katamala olives 6 cloves of chopped, brine garlic cloves 1/2 juice of a lemon 2 tbsp. extra virgin olive oil dash of vinegar, salt, and pepper

Place ingredients on top of a sliced, baked, crispy baguette! 🙂

Top with:

grated Parmesan cheese

YUMMM!!!

Soft Beef Taco Platter

So Delicious!

Flavorful Seasoned Taco Meat

Ingredients:

1 lb. lean ground beef

1/2 med. diced onion

Dash of salt, pepper, paprika, chili, onion, garlic, and cumin powder.

1/2 packet of Mc Cormick taco seasoning mild taco seasoning

4 oz. of a 8 oz. can of hunts tomato sauce (save other 4oz. for Spanish rice!)

1/3 cup water

2 tbs. oil

Recipe:

Put oil in a cast iron skillet, add onion, and beef.

Brown onion, beef; then add all seasonings.

Stir and saute for a few minutes.

Add tomato sauce, water; and simmer with a lid on, for 20 minutes.

Baked Spanish Rice

Ingredients:

1 1/2 cups of long grain Mahatma rice

1/4 cup juice of a can of original Rotel (save tomatoes for salsa later!)

4 oz. of tomato sauce

3 cups water

1 tbs. butter

1 beef bullion cube

dash of dried parsley, cumin, garlic, onion, and chili powder.

Recipe:

Pre- heat oven at 350*

In a baking dish add rice.

In a sauce pan add water, Rotel juice, tomato sauce, bullion cube, butter, and seasoning. Bring to a boil.

Pour boiled liquid over rice, cover and put in oven for 30 minutes.

Take out and let set for 15 min.

Fast Salsa

In a small food processor blend together all ingredients.

1 can half of it drained original Rotel (save juice for Spanish rice!)

1 cup of green salsa Verde

3 scallions

1 tbs. pickled jalapenos

2 tbs. fresh parsley or cilantro

1 tbs. juice of a lime

1 clove garlic

2 tbs. onion (optional)

1 teas. sugar

dash of salt

Eat with toasted tortillas, shredded lettuce, diced tomatoes, shredded cheddar cheese, salsa, and lemon or lime wedges.

Eat and Enjoy!!

Peachy Pork Chops

A Family Favorite!!

Ingredients:

6 pork chops

1 large can of half peaches, in heavy syrup.

2 tbsp. oil

Dash of salt, pepper, Mrs.Dash seasoning, garlic, and onion powder.

 

Recipe:

In a skillet season pork chops and brown in oil. Then set aside.

In a 13 by 9 baking dish place pork chops.

In the same skillet, d-glaze with the juice of peaches.

Pour over pork chops. Cover and bake at 350 for 40 min.

So yummy!

Serve with rice, and a side of cooked spinach.

Rich Man’s Dinner

It is time to celebrate!!!

Don’t go out to eat!  Make it at home.  Broiled lobster, steamed crab legs, grilled steaks, shrimp cocktail, and bruschetta!!  This a rare meal for birthdays and special occasions.  I have only had this meal a few times in my life.  It is so much cheaper if you cook it at home!!

Raisin Cinnamon Bread with Strawberry Cream Cheese

Spread strawberry cream cheese on cinnamon raisin bread.  Put on sliced strawberries. (optional)

Cut crust off sandwiches.  Cut into triangles.  Eat and enjoy!!
