This is so flavorful! So yummy!! I will make this again!

Chicken-3 legs, 3 thighs, and 3 wings (keep skin on), or you can just use a family pack of thighs

In a large bowl toss this marinate on chicken, in refrigerator for 1 to 24 hours:


1 teas. of paprika, cumin, salt, and lemon zest

6 cloves of crushed garlic

3 tbs. fresh ginger; finely chopped

2 tbsp. grated onion

1/2 juice of a lemon

3 tbsp. oil



Put marinated chicken in a large cooking pot or Tagine

Then add a handful of fresh parsley; with stems, plus 1/2 grated onion, and 2 cups water.

Simmer in cooking pot, with lid slightly off, for 40 to 50 min.  Stir occasionally.

After chicken is cooked, take out chicken, and put in a deep platter. Let cool a bit; remove skin.

Strain broth in large bowl.

With a large spoon, skim off excess fat from broth.

Put broth back in pot, on stove. Bring to a simmer.

Add 1/2 tsp. paprika (or saffron), 2 tbsp. fresh lemon juice, and 1 cup green olives.  Stir well.

Pour over chicken.

Serve with steamed rice or pita bread. I had it with rice and a can of sweet peas.
